Huckleberry Hand Pies

These hand pies are delightful pockets of flavor, featuring a flaky crust and a sweet-tart huckleberry filling. Perfect for picnics or snack time!

Ingredients

  • 2 disks of all-butter vodka dough (substituting vodka with apple cider vinegar is optional)
  • 3 cups huckleberries (or other berries)
  • Zest and juice of 1 lemon
  • 1 cup sugar
  • 1 tablespoon tapioca starch
  • 1 large egg
  • 1 teaspoon water
  • Dash of salt
  • 2 tablespoons sparkling sugar (turbinado or granulated)

Instructions

  • Chill the pie dough disks in the refrigerator.
  • Roll out one disk to ⅛" to ¼" thickness.
  • Cut into circles using a cookie cutter.
  • Chill the circles on a lined baking sheet.
  • Combine huckleberries, lemon zest, juice, and sugar in a bowl.
  • Stir in tapioca starch and let sit for 15 minutes.
  • Preheat oven to 375°F.
  • Fill dough circles with huckleberry mixture and seal.
  • Chill filled hand pies for another 30 minutes.
  • Brush with egg wash and sprinkle with sugar.
  • Bake for 20-25 minutes until golden brown.

Notes

Keep dough well chilled for a flaky crust.
Don’t overfill the hand pies to prevent spillage.
Try other berries or add spices for variations.
