Ingredients

- 2 disks of all-butter vodka dough (substituting vodka with apple cider vinegar is optional)
- 3 cups huckleberries (or other berries)
- Zest and juice of 1 lemon
- 1 cup sugar
- 1 tablespoon tapioca starch
- 1 large egg
- 1 teaspoon water
- Dash of salt
- 2 tablespoons sparkling sugar (turbinado or granulated)
Instructions
- Chill the pie dough disks in the refrigerator.
- Roll out one disk to ⅛" to ¼" thickness.
- Cut into circles using a cookie cutter.
- Chill the circles on a lined baking sheet.
- Combine huckleberries, lemon zest, juice, and sugar in a bowl.
- Stir in tapioca starch and let sit for 15 minutes.
- Preheat oven to 375°F.
- Fill dough circles with huckleberry mixture and seal.
- Chill filled hand pies for another 30 minutes.
- Brush with egg wash and sprinkle with sugar.
- Bake for 20-25 minutes until golden brown.
Notes
Keep dough well chilled for a flaky crust.
Don’t overfill the hand pies to prevent spillage.
Try other berries or add spices for variations.
