- ¼ cup unsalted butter, softened
- 3 tablespoons sweetened condensed milk
- 2 tablespoons honey plus extra for drizzling
- 1 large egg yolk
- 1 teaspoon vanilla extract or paste
- ¼ teaspoon salt
- 12 slices thick cut brioche
- 1 pound fresh strawberries, hulled and chopped
- juice of 1/2 lemon
- 1 teaspoon sugar
- 3 cups soft to medium whipped cream
- coconut flakes toasted, optional
Instructions
- Preheat your oven to 350˚F.
- In a mixing bowl, whisk together the butter, sweetened condensed milk, and honey until well combined. Add the egg yolk, vanilla extract, and salt. Mix thoroughly and set aside.
- Make diagonal cuts in each slice of brioche, about 1 inch apart, being careful not to cut all the way through.
- Spread 2 to 3 tablespoons of the honey mixture over each slice of brioche until fully covered.
- Arrange the brioche slices on a parchment-lined baking sheet, leaving about 1/2 inch between each slice.
- Let the brioche sit for about 10 minutes. Then, bake in the oven for 14 to 16 minutes until golden brown.
- While the brioche is baking, combine strawberries, lemon juice, and sugar in a mixing bowl. Toss well to combine.
- Once baked, allow the brioche to cool for approximately 10 minutes.
- Serve the honey toast by topping each slice with whipped cream, spoonfuls of the strawberry mixture, a sprinkle of toasted coconut flakes, and a drizzle of honey.
Notes
For a richer flavor, use high-quality butter and honey.
Feel free to substitute strawberries with other fruits like bananas or blueberries for variety.
Ensure not to overbake the brioche to maintain a soft texture.
