  • 3 tablespoons sweetened condensed milk
  • 2 tablespoons honey plus extra for drizzling
  • 1 large egg yolk
  • 1 teaspoon vanilla extract or paste
  • ¼ teaspoon salt
  • 12 slices thick cut brioche
  • 1 pound fresh strawberries, hulled and chopped
  • juice of 1/2 lemon
  • 1 teaspoon sugar
  • 3 cups soft to medium whipped cream
  • coconut flakes toasted, optional

Instructions

  1. Preheat your oven to 350˚F.
  2. In a mixing bowl, whisk together the butter, sweetened condensed milk, and honey until well combined. Add the egg yolk, vanilla extract, and salt. Mix thoroughly and set aside.
  3. Make diagonal cuts in each slice of brioche, about 1 inch apart, being careful not to cut all the way through.
  4. Spread 2 to 3 tablespoons of the honey mixture over each slice of brioche until fully covered.
  5. Arrange the brioche slices on a parchment-lined baking sheet, leaving about 1/2 inch between each slice.
  6. Let the brioche sit for about 10 minutes. Then, bake in the oven for 14 to 16 minutes until golden brown.
  7. While the brioche is baking, combine strawberries, lemon juice, and sugar in a mixing bowl. Toss well to combine.
  8. Once baked, allow the brioche to cool for approximately 10 minutes.
  9. Serve the honey toast by topping each slice with whipped cream, spoonfuls of the strawberry mixture, a sprinkle of toasted coconut flakes, and a drizzle of honey.
