- 2 pounds boneless pork chops at least 1” thick
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cloves garlic minced
- 2 tablespoons dijon mustard
- 2 tablespoons honey
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon fresh thyme
- 1/2 teaspoon smoked paprika
Instructions
- Remove the pork chops from the refrigerator 30 minutes before cooking and pat dry with paper towels. Season both sides with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Cook the pork chops for 5-6 minutes per side until golden brown and cooked through. Transfer to a plate and cover with foil to keep warm.
- Reduce the heat to medium and add the butter to the skillet. Once melted, whisk in the flour and cook for two minutes. Stir in the minced garlic and cook for another 30 seconds.
- Add the Dijon mustard and honey, then slowly incorporate the chicken broth and heavy cream. Season the sauce with thyme and smoked paprika.
- Cook the sauce until it thickens slightly, then return the pork chops to the skillet, coating them in the sauce. Serve warm.
Notes
For best results, ensure the pork chops are at room temperature before cooking.
