Homemade Salted Caramel

Ingredients

  • 1 cup (200 grams) granulated sugar
  • 6 tablespoons (85 grams) salted butter, room temperature & cubed
  • ½ cup (120 grams) heavy cream, room temperature
  • 1 teaspoon vanilla bean paste or extract
  • 1 teaspoon fine sea salt

Instructions

  • Add sugar to a medium saucepan and place over low-medium heat, stirring continuously until it melts and turns amber.
  • Carefully add cubed salted butter and whisk until melted.
  • Gradually stream in heavy cream while whisking, letting the mixture boil for 30-60 seconds while stirring.
  • Remove from heat, whisk in vanilla and fine sea salt, then cool in a heat-proof bowl.
  • Store in an airtight container in the refrigerator.

Notes

Use a heavy-bottomed pan for even heat distribution.
Monitor the heat closely to avoid burning.
You can adjust the salt according to your taste preferences.
