- 1 cup (200 grams) granulated sugar
- 6 tablespoons (85 grams) salted butter, room temperature & cubed
- ½ cup (120 grams) heavy cream, room temperature
- 1 teaspoon vanilla bean paste or extract
- 1 teaspoon fine sea salt
Instructions
- Add sugar to a medium saucepan and place over low-medium heat, stirring continuously until it melts and turns amber.
- Carefully add cubed salted butter and whisk until melted.
- Gradually stream in heavy cream while whisking, letting the mixture boil for 30-60 seconds while stirring.
- Remove from heat, whisk in vanilla and fine sea salt, then cool in a heat-proof bowl.
- Store in an airtight container in the refrigerator.
Notes
Use a heavy-bottomed pan for even heat distribution.
Monitor the heat closely to avoid burning.
