- 2 packets Red Star® Active Dry Yeast (4 and 1/2 teaspoons)
- 2 and 1/4 cups (540ml) warm water (110°F – 115°F)
- 2 teaspoons granulated sugar
- 2 teaspoons salt
- 2 Tablespoons (30ml) olive oil
- 6 cups (780g) bread flour (spooned & leveled), plus more for hands and surface
- Egg wash: 1 large egg beaten with 1 Tablespoon water or milk
Instructions
- Combine warm water and yeast; let sit until frothy.
- Mix in sugar, salt, olive oil, and most of the flour.
- Knead the dough until smooth; perform windowpane test.
- Let rise in a warm place until doubled in size.
- Shape into balls and rest on baking sheets.
- Brush with egg wash and score tops.
- Bake at 400°F for 30 minutes until golden.
- Cool, cut tops, and scoop out interior.
Notes
Ensure water temperature is correct for yeast activation.
Avoid adding too much flour when kneading.
Use a thermometer to check bread doneness.
