- 3–4 boneless, skinless chicken breasts
- 1/2 cup low-fat ranch dressing
- 4 cups mixed greens (romaine lettuce and spinach)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 cup shredded cheddar cheese (optional)
- 1/4 cup bacon bits (optional)
Instructions
- Preheat grill or stovetop grill pan over medium heat. Season chicken with salt and pepper.
- Grill chicken for 6-7 minutes per side until fully cooked. Remove and let rest.
- Wash and chop mixed greens. Halve cherry tomatoes and slice cucumber.
- Slice the rested chicken into strips.
- Combine mixed greens, tomatoes, cucumber, chicken, and optionally cheese and bacon in a bowl.
- Drizzle with ranch dressing and toss gently.
Notes
Marinate chicken in ranch dressing for extra flavor before grilling.
Store salad components and dressing separately for freshness if making ahead.
Adjust dressing amount to suit your taste.
