- ¼ cup coconut sugar
- ½ cup melted coconut oil
- 1 teaspoon vanilla extract
- ⅔ cup oat flour (homemade)
- ¾ cup rolled oats (gluten-free or regular)
- 1 tablespoon pumpkin pie spice
- ½ teaspoon baking soda
- ½ cup chocolate chips
Instructions
- Preheat oven to 350ºF and prepare an 8×8 inch baking pan.
- Whisk together eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla extract until smooth.
- Gradually mix in oat flour, rolled oats, pumpkin pie spice, and baking soda until just combined.
- Fold in chocolate chips.
- Pour batter into the prepared pan and bake for 24-26 minutes until golden.
- Cool in the pan for 10 minutes before cutting into squares.
Notes
Use freshly ground oat flour for enhanced flavor.
Do not overbake to prevent the bars from becoming dry.
These bars can be customized by substituting chocolate chips with dried fruits or nuts.
