- 1 whole pineapple (peeled, cored, and cut into chunks; about 6.5–7 cups frozen)
- ½ cup coconut milk (more as needed for consistency)
- 1–3 tablespoons honey, maple syrup, or agave (to taste)
Instructions
- Peel and core the pineapple, then cut into small chunks and freeze for about 4 hours.
- Place frozen pineapple in a food processor and add coconut milk.
- Blend until smooth and creamy, scraping down the sides as needed.
- Sweeten to taste with honey, maple syrup, or agave.
- Pipe into serving bowls and add desired toppings.
Notes
Make ahead and store in the freezer until needed.
If too solid, let it thaw briefly before re-blending with coconut milk.
Experiment with flavors by adding vanilla, lime juice, or other frozen fruits.
