- 8 Apples (Sliced, Peeled & Diced)
- 4 tbsp Butter
- 4 tsp Cinnamon
- 8 tbsp Maple Syrup
- 2 cups Apple Juice
- 2 cups Pineapple or Tropical Juice
- 1/4 cup + 2 tbsp Water
- 1/4 cup + 2 tbsp Corn Starch
- Whole Wheat Tortilla Shells
Instructions
- Peel, slice, and dice apples; place in a medium saucepan.
- Add butter, cinnamon, and maple syrup; cook until apples are soft.
- Mix corn starch and water, then stir into apple mixture until thick.
- In another saucepan, combine apple juice and pineapple juice; bring to boil.
- Thicken the sauce with corn starch and water, stirring until ready.
- Fill tortillas with apple mixture, roll tightly, and place in a baking dish.
- Pour sauce over enchiladas; bake at 350°F for about 30 minutes.
- Serve warm with Greek yogurt, mint, or powdered sugar.
Notes
Using a variety of apples enhances flavor.
Let the apple mixture cool slightly before filling to avoid sogginess.
Leftovers can be stored in an airtight container for up to three days.
