  • 1/4 cup + 2 tbsp Corn Starch
  • Whole Wheat Tortilla Shells

Instructions

  • Peel, slice, and dice apples; place in a medium saucepan.
  • Add butter, cinnamon, and maple syrup; cook until apples are soft.
  • Mix corn starch and water, then stir into apple mixture until thick.
  • In another saucepan, combine apple juice and pineapple juice; bring to boil.
  • Thicken the sauce with corn starch and water, stirring until ready.
  • Fill tortillas with apple mixture, roll tightly, and place in a baking dish.
  • Pour sauce over enchiladas; bake at 350°F for about 30 minutes.
  • Serve warm with Greek yogurt, mint, or powdered sugar.
