Ham Fried Rice

Ingredients

  • 4 teaspoons vegetable oil divided use
  • 2 cups ham cut into 1/2 inch pieces
  • 2/3 cup onion chopped
  • 1/2 cup carrots peeled, quartered and sliced
  • 1/2 cup frozen peas thawed
  • 2 teaspoons minced garlic
  • 2 eggs lightly beaten
  • 3 cups cooked long grain white rice
  • 3 tablespoons soy sauce low sodium
  • 1 tablespoon toasted sesame oil
  • salt and pepper to taste
  • 1/4 cup green onions thinly sliced

Instructions

  1. Heat 2 teaspoons of oil in a large pan over medium high heat.
  2. Place the ham in a single layer in the pan and cook for 2-3 minutes, stirring occasionally, until browned.
  3. Remove the ham from the pan and cover with foil to keep warm.
  4. Pour 1 teaspoon of oil into the pan, add the onion and carrots, and cook for 5-6 minutes until softened. Season with salt and pepper.
  5. Add the garlic and cook for an additional 30 seconds.
  6. Remove the vegetables from the pan, add to the plate with ham, and cover to keep warm.
  7. Pour the remaining teaspoon of oil into the pan, add the eggs, and scramble for about 3 minutes. Season with salt and pepper.
  8. Add rice, ham, cooked vegetables, and peas to the pan. Stir to combine.
  9. Mix in the soy sauce and sesame oil, then cook until everything is heated through, about 4-5 minutes.
  10. Sprinkle green onions on top of the fried rice and serve.

Notes

For extra flavor, use leftover rice from the day before.
Feel free to add other vegetables like bell peppers or broccoli based on your preference.
