Ingredients

  • 4 skinless boneless chicken breasts
  • 1/2 cup fresh parsley, finely chopped
  • 1/2 cup fresh cilantro, finely chopped
  • 2 green onions, green parts only, finely chopped
  • 23 cloves garlic, finely chopped
  • 1 red chili, deseeded and finely chopped
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/3 cup olive oil
  • 1 tbsp red or white wine vinegar
  • Kosher salt and ground pepper, to taste

Instructions

  • Combine parsley, cilantro, green onions, garlic, and red chili in a bowl.
  • Add oregano, basil, olive oil, vinegar, salt, and pepper. Mix well and let rest for 10 minutes.
  • Pour 1/3 of the chimichurri sauce over the chicken, marinate for 15-20 minutes.
  • Preheat grill to medium-high heat. Grill chicken for 6-8 minutes on each side until fully cooked.
  • Serve chicken on a platter with reserved chimichurri sauce.

Notes

Marinate chicken longer for intensified flavor.
Ensure grill is preheated to prevent sticking.
Let grilled chicken rest for a few minutes to retain juiciness.
