- 4 skinless boneless chicken breasts
- 1/2 cup fresh parsley, finely chopped
- 1/2 cup fresh cilantro, finely chopped
- 2 green onions, green parts only, finely chopped
- 2–3 cloves garlic, finely chopped
- 1 red chili, deseeded and finely chopped
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/3 cup olive oil
- 1 tbsp red or white wine vinegar
- Kosher salt and ground pepper, to taste
Instructions
- Combine parsley, cilantro, green onions, garlic, and red chili in a bowl.
- Add oregano, basil, olive oil, vinegar, salt, and pepper. Mix well and let rest for 10 minutes.
- Pour 1/3 of the chimichurri sauce over the chicken, marinate for 15-20 minutes.
- Preheat grill to medium-high heat. Grill chicken for 6-8 minutes on each side until fully cooked.
- Serve chicken on a platter with reserved chimichurri sauce.
Notes
Marinate chicken longer for intensified flavor.
Ensure grill is preheated to prevent sticking.
Let grilled chicken rest for a few minutes to retain juiciness.
