Instructions

- In another bowl, beat the eggs, then add Greek yogurt, milk, and vanilla extract; whisk until smooth.
- Carefully fold the wet mixture into the dry ingredients with a rubber spatula, mixing until just combined. The batter will be thick and slightly lumpy; avoid overmixing.
- Preheat a griddle or nonstick skillet over low-medium heat and lightly grease with oil or cooking spray.
- Pour about ¼ cup of batter for each pancake onto the griddle. Cook for 2 to 3 minutes until air bubbles form and edges set.
- Flip pancakes and cook for an additional 2 to 3 minutes until golden brown.
- Repeat with remaining batter, greasing the griddle as necessary.
- Serve warm with butter, maple syrup, fresh fruit, or your choice of toppings.
