Ingredients

  • 8 ounces Feta cheese
  • 1/2 cup plain Greek yogurt
  • 2 teaspoons red wine vinegar
  • 2 cloves garlic, minced
  • 1/8 teaspoon freshly cracked black pepper
  • 1/4 teaspoon dried oregano
  • 3/4 cup finely diced cucumber
  • 1/2 cup diced pitted kalamata olives
  • 1/4 cup finely minced red onion
  • 1 tablespoon fresh minced parsley
  • 3 roma tomatoes, seeded and diced
  • 4 spinach tortillas (12-inch size)

Instructions

  • Blend feta cheese, Greek yogurt, red wine vinegar, minced garlic, black pepper, and dried oregano until smooth.
  • Mix diced cucumber, roma tomatoes, kalamata olives, red onion, and parsley in a bowl. Season with salt and pepper.
  • Warm tortillas in the microwave. Spread feta mixture on each and add vegetable filling.
  • Roll tortillas tightly into logs and wrap securely. Chill for at least 30 minutes.
  • Slice pinwheels and arrange on a serving platter. Garnish with parsley.

Notes

Blend feta well for creamy texture.
Do not overfill tortillas to avoid spillage.
Chill adequately for best flavor.
