- 1 lb (500 g) green gooseberries
- 1/2 cup (100 g) caster sugar
- 2 tablespoons all-purpose flour
- 7 tablespoons (100 g) butter, softened
- 1 cup (150 g) all-purpose flour
- 1/3 cup (60 g) granulated sugar
- 5 tablespoons oats
- 3 tablespoons demerara sugar
- 1/4 teaspoon salt
Instructions
- Top and tail the gooseberries, cutting off tough tops and scraping away tails.
- Rinse the gooseberries under cold water and pat them dry.
- Combine caster sugar and 2 tablespoons of flour in a bowl; toss gooseberries to coat.
- Arrange gooseberries in a greased baking dish.
- Mix softened butter, 1 cup of flour, salt, and granulated sugar until crumbly for the topping.
- Stir in oats and demerara sugar, then spoon over the gooseberries.
- Preheat the oven to 350°F (180°C) and bake for 45 minutes.
Notes
Use room temperature ingredients for optimal mixing.
Adjust sugar based on the tartness of the gooseberries.
Avoid overmixing the crumble mixture; it should remain crumbly.
