Ingredients

  • 1 lb (500 g) green gooseberries
  • 1/2 cup (100 g) caster sugar
  • 2 tablespoons all-purpose flour
  • 7 tablespoons (100 g) butter, softened
  • 1 cup (150 g) all-purpose flour
  • 1/3 cup (60 g) granulated sugar
  • 5 tablespoons oats
  • 3 tablespoons demerara sugar
  • 1/4 teaspoon salt

Instructions

  • Top and tail the gooseberries, cutting off tough tops and scraping away tails.
  • Rinse the gooseberries under cold water and pat them dry.
  • Combine caster sugar and 2 tablespoons of flour in a bowl; toss gooseberries to coat.
  • Arrange gooseberries in a greased baking dish.
  • Mix softened butter, 1 cup of flour, salt, and granulated sugar until crumbly for the topping.
  • Stir in oats and demerara sugar, then spoon over the gooseberries.
  • Preheat the oven to 350°F (180°C) and bake for 45 minutes.

Notes

Use room temperature ingredients for optimal mixing.
Adjust sugar based on the tartness of the gooseberries.
Avoid overmixing the crumble mixture; it should remain crumbly.
