- 900 grams (about 8–10 large) Vidalia onions, chopped
- Olive oil, for cooking
- Salt, to taste
- 2 sheets puff pastry, thawed according to box instructions but still cold
- 4 oz crumbled goat cheese
- 240 mL (1 cup) balsamic vinegar
- 2 tablespoons brown sugar
Instructions
- Slice the onions and caramelize in olive oil over medium heat, stirring occasionally until deep caramel color is achieved.
- Prepare the puff pastry by cutting out circles and creating a border for filling.
- Layer caramelized onions and goat cheese on puff pastry shells.
- Bake at 375°F for 18-20 minutes until golden.
- Prepare balsamic glaze by simmering vinegar and brown sugar until it coats the back of a spoon.
- Drizzle glaze over tarts before serving.
Notes
Slice onions uniformly for even cooking.
Caramelize slowly for the best flavor.
Leftovers can be stored up to 3 days in an airtight container.
