Ingredients

  • 900 grams (about 810 large) Vidalia onions, chopped
  • Olive oil, for cooking

  • 2 sheets puff pastry, thawed according to box instructions but still cold
  • 4 oz crumbled goat cheese
  • 240 mL (1 cup) balsamic vinegar
  • 2 tablespoons brown sugar

Instructions

  • Slice the onions and caramelize in olive oil over medium heat, stirring occasionally until deep caramel color is achieved.
  • Prepare the puff pastry by cutting out circles and creating a border for filling.
  • Layer caramelized onions and goat cheese on puff pastry shells.
  • Bake at 375°F for 18-20 minutes until golden.
  • Prepare balsamic glaze by simmering vinegar and brown sugar until it coats the back of a spoon.
  • Drizzle glaze over tarts before serving.
