Ingredients

Scale
  • 6 cups water (divided)
  • ½ cup honey or sugar
  • 12 stems fresh thyme
  • 3-inch piece of ginger (thinly sliced)
  • ½ cup lemon juice (freshly squeezed is best!)
  • Lemon slices, ginger slices, and thyme sprigs (for garnish)

Instructions

  • In a pot, combine 2 cups of water, honey (or sugar), thyme, and ginger.
  • Bring to boil, then simmer for 15 minutes.
  • Cool the mixture and strain into a pitcher.
  • Add remaining water and lemon juice to the syrup; stir to combine.

Notes

For a stronger flavor, steep thyme and ginger longer.
Adjust sweetness by adding more honey or sugar if desired.
