- 6 cups water (divided)
- ½ cup honey or sugar
- 12 stems fresh thyme
- 3-inch piece of ginger (thinly sliced)
- ½ cup lemon juice (freshly squeezed is best!)
- Lemon slices, ginger slices, and thyme sprigs (for garnish)
Instructions
- In a pot, combine 2 cups of water, honey (or sugar), thyme, and ginger.
- Bring to boil, then simmer for 15 minutes.
- Cool the mixture and strain into a pitcher.
- Add remaining water and lemon juice to the syrup; stir to combine.
- Garnish with lemon slices, thyme, and ginger before serving over ice.
Notes
For a stronger flavor, steep thyme and ginger longer.
Adjust sweetness by adding more honey or sugar if desired.
