- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (129g) brown sugar, packed
- 1 teaspoon vanilla extract
- 1 large egg
- 1 box (3.4 ounces/96g) Instant Vanilla Pudding Mix
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/4 cups (155g) all-purpose flour
- 1 cup (152g) white chocolate chips
- 2 cups (76g) Fruity Pebbles
Instructions
- Cream together the softened butter and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- Stir in the vanilla pudding mix, baking soda, and salt.
- Gradually add all-purpose flour until no dry pockets remain.
- Fold in white chocolate chips and Fruity Pebbles until evenly distributed.
- Scoop dough onto baking sheets and refrigerate for at least 30 minutes.
- Preheat the oven to 350°F (175°C).
- Bake cookies for 9-11 minutes until edges are golden brown and centers are soft.
- Cool on baking sheets for 5 minutes before transferring to a wire rack.
Notes
Use softened butter for easier mixing.
Do not skip the chilling step to prevent cookies from spreading.
