- 2 large eggs
- 1/2 cup granulated sugar
- Pinch of salt
- 1 tablespoon cornstarch
- 8 oz can crushed pineapple, drained (with juices reserved)
- 2 cups whipped topping (try SoDelicious CoCoWhip for a dairy-free option)
- 2 cups red grapes, halved
- 3 small or 2 large bananas, sliced
- 3/4 cup gluten-free mini marshmallows
Instructions
- Whisk eggs, sugar, and salt in a bowl until smooth.
- Dissolve cornstarch in reserved pineapple juice, then combine with egg mixture.
- Heat custard mixture in a saucepan, whisking constantly until just about to simmer.
- Lower heat and stir until thickened, about 5 minutes.
- Strain custard into a bowl and cool.
- Combine cooled custard, drained pineapple, and whipped topping in a bowl.
- Gently fold in grapes and mini marshmallows.
- Chill for at least 2 hours, then fold in bananas before serving.
Notes
Use room temperature eggs for better consistency.
Add bananas just before serving to prevent browning.
Store leftovers in an airtight container and enjoy within a few days.
