- 2 cups leftover homemade mac and cheese
- 2 cups shredded Monterey Jack cheese
- 2 cups shredded Colby Jack cheese
- 1 cup all-purpose flour
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- ⅛ teaspoon onion powder
- ⅛ teaspoon garlic powder
- 3–4 large eggs, beaten
- 2 cups seasoned panko breadcrumbs
- Vegetable oil for frying
Instructions
- Line a baking sheet with parchment paper.
- Combine mac and cheese with shredded cheeses in a bowl.
- Form the mixture into 2-inch balls and place on the baking sheet.
- Prepare the coating by mixing flour, salt, pepper, onion powder, and garlic powder.
- Roll each ball in the flour mixture, dip in beaten eggs, and coat with panko breadcrumbs.
- Freeze the bites for at least 30 minutes.
- Heat vegetable oil to 360°F in a frying pan.
- Fry the bites in batches for about 4 minutes until golden brown.
- Sprinkle with sea salt and serve hot.
Notes
Ensure oil is at the right temperature to avoid sogginess.
Chill bites before frying for better shape retention.
Experiment with different cheeses or spices for variety.
