- 8 large fresh peaches, peeled, pitted, and sliced
- ⅓ cup organic brown sugar
- ⅓ cup organic sugar
- 1 tsp lemon juice
- 2 tsp cornstarch
- ½ tsp cinnamon

- 1 ½ cups all-purpose flour
- ⅓ cup organic brown sugar (for topping)
- ⅓ cup organic sugar (for topping)
- 1 ½ tsp baking powder
- ½ tsp salt
- 1 stick Earth Balance® butter, cut into small pieces
- ⅓ cup boiling water
- 4 tsp organic sugar (for topping)
- 1 ½ tsp cinnamon (for topping)
Instructions
- Preheat the oven to 425°F.
- Slice peaches and mix with sugars, lemon juice, cornstarch, cinnamon, and nutmeg.
- Pour peach mixture into an ungreased 9 x 13 baking dish and bake for 10 minutes.
- In a bowl, combine flour, sugars, baking powder, and salt.
- Blend in butter until crumbly, then add boiling water.
- Spoon topping over pre-baked peaches.
- Mix cinnamon and sugar, then sprinkle over topping.
- Bake for 35 minutes until golden brown.
Notes
Use ripe peaches for the best flavor.
Adjust sugar based on peach sweetness.
Add oats or nuts to the topping for extra crunch.
