Instructions
- Combine sugar and water in a saucepan; simmer until sugar dissolves.
- Pit the cherries using a cherry pitter.
- Blend pitted cherries, ½ cup of simple syrup, lime juice, and salt until smooth.
- Strain blended mixture through a sieve to remove solids.
- Check sweetness using the egg float test; adjust with more syrup if needed.
- Chill the mixture in the refrigerator for one hour.
- Churn in an ice cream maker for about 15 minutes until soft-serve texture.
- Transfer sorbet to a container and freeze for 2-4 hours until firm.
- Serve with mint leaves or lime zest for garnish.
