Fresh Cherry Sorbet is a delightful and refreshing dessert that celebrates summer with bold cherry flavor and a hint of lime. It’s easy to make, requires few ingredients, and provides a healthier alternative to traditional ice cream. Ideal for any summer gathering or a sweet snack treat.

  • Total Time: 35 minutes
  • Yield: Approximately 4 cups 1x

Ingredients

Scale
  • 4 cups fresh cherries, pitted (approximately 2 lbs)
  • 1 cup granulated sugar
  • 1 cup water
  • 3 teaspoons freshly squeezed lime juice
  • ½ teaspoon kosher salt

Instructions

  • Combine sugar and water in a saucepan; simmer until sugar dissolves.
  • Pit the cherries using a cherry pitter.
  • Blend pitted cherries, ½ cup of simple syrup, lime juice, and salt until smooth.
  • Strain blended mixture through a sieve to remove solids.
  • Check sweetness using the egg float test; adjust with more syrup if needed.
  • Chill the mixture in the refrigerator for one hour.
  • Churn in an ice cream maker for about 15 minutes until soft-serve texture.
  • Transfer sorbet to a container and freeze for 2-4 hours until firm.
  • Serve with mint leaves or lime zest for garnish.

Notes

Ensure your ice cream maker base is fully frozen for best results.
Taste the mixture before chilling and adjust flavors as desired.
For extra smoothness, process the mixture a second time before freezing.
