- 2 cups (260g) whole wheat flour, spooned & leveled
- 1 tablespoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 6 tablespoons (85g) unsalted butter, melted and slightly cooled
- 2 large eggs, at room temperature
- 2 tablespoons (25g) packed light or dark brown sugar
- 1 and 3/4 cups (420g/ml) buttermilk
- 1 teaspoon pure vanilla extract
Instructions
- Preheat the waffle maker on medium-high heat and the oven to 200°F (93°C), placing a wire rack on a baking sheet.
- In a large bowl, whisk together the whole wheat flour, baking powder, cinnamon, and salt. Set aside.
- In another bowl, combine the melted butter, eggs, and brown sugar. Mix in the buttermilk and vanilla until everything is well combined. Gradually add this mixture to the dry ingredients, whisking gently until just combined, leaving some lumps.
- Grease the waffle maker with nonstick spray. Pour about 1/3 cup of batter into each well of the waffle maker and cook until crisp, approximately 4-5 minutes. Keep the cooked waffles warm in the preheated oven while you finish cooking the rest.
- Serve the waffles warm with your choice of toppings.
Notes
For lighter waffles, do not over-mix the batter; it’s fine to have some lumps.
You can substitute the butter with coconut oil for a dairy-free option.
Add toppings like fresh berries, maple syrup, or whipped cream for extra flavor.
