- 1 tablespoon maple syrup (to adjust glaze)
- 1/4 cup powdered sugar
Instructions
- Whisk together pumpkin puree, egg, almond butter, maple syrup, and vanilla extract in a large bowl.
- Add coconut sugar, pumpkin pie spice, and baking soda; stir until combined.
- Pour batter into an 8×8 prepared baking dish and spread evenly.
- Bake in a preheated oven for 30 to 35 minutes until center is set.
- Cool on a rack for 20 minutes and then refrigerate if desired.
- Mix maple syrup and powdered sugar for glaze, drizzle over cooled bars.
- Slice and serve with optional toppings.
Notes
Use pure pumpkin puree, not pumpkin pie filling.
Allow bars to cool completely before slicing.
Fold in chopped walnuts or pecans for added crunch.
