- 1 medium yellow or white onion
- 4–5 cloves garlic, peeled and chopped
- 3–4 tablespoons fresh horseradish, grated
- 3–4 tablespoons fresh ginger, grated
- Raw apple cider vinegar (enough to pour over other ingredients and fill the jar)
- Raw honey (added later, after weeks of infusion)
- Cayenne pepper powder (added later if other hot peppers aren't used)
- 3–4 tablespoons fresh citrus (e.g., lemon or orange) – optional
- 3–4 tablespoons fresh grated turmeric – optional
- Black pepper – optional
- Hot chili peppers (as a substitute for cayenne) – optional
- ¼ cup dried elderberries or rosehips – optional
- Fresh herbs (e.g., oregano, lemongrass, thyme, rosemary, sage, calendula blooms) – optional
Instructions
- Chop onion, garlic, horseradish, and ginger and prepare any optional citrus.
- Fill a clean glass jar with the chopped ingredients until about ¾ full.
- Pour raw apple cider vinegar over the ingredients to fill the jar.
- Seal the jar and let it steep at room temperature for 3 to 4 weeks, shaking daily.
- Strain the mixture after the steeping period, squeezing solids for maximum liquid.
- Add raw honey and cayenne pepper to taste, stirring to combine.
- Store in the refrigerator or a cool, dark place.
