Ingredients

  • 6 teaspoons (60 ml) lemon juice

Instructions

  • Wash, dry, and stem the figs; cut them into quarters and chop into cubes.
  • Combine figs and water in a saucepan and simmer for about 20 minutes.
  • Stir in sugar and lemon juice, mixing until sugar dissolves.
  • Bring mixture to a rolling boil and cook for 12 minutes.
  • Check for setting point; skim off any scum and ladle into sterilized jars.
