- 800 g (28 oz) fresh figs, prepared weight
- 2 tablespoons (40 ml) water
- 2 ⅔ cups (600 g) granulated sugar
- 6 teaspoons (60 ml) lemon juice
Instructions
- Wash, dry, and stem the figs; cut them into quarters and chop into cubes.
- Combine figs and water in a saucepan and simmer for about 20 minutes.
- Stir in sugar and lemon juice, mixing until sugar dissolves.
- Bring mixture to a rolling boil and cook for 12 minutes.
- Check for setting point; skim off any scum and ladle into sterilized jars.
Notes
Select ripe figs for the best flavor.
Watch closely during boiling to prevent overcooking.
