- 1 tablespoon lemon juice
- 1 ½ teaspoons Amoretti Natural Vanilla Bean Artisan Flavor Paste (plus 1 teaspoon for crumb mixture)
- 1 cup all-purpose flour (125 g)
- ½ cup packed brown sugar (110 g)
- ½ teaspoon fine sea salt
- ¼ teaspoon baking soda
- ¼ teaspoon ground cinnamon
- Pinch ground cardamom
- ½ cup unsalted butter, softened and cut into cubes (113 g)
- 1 cup old-fashioned rolled oats (100 g)
Instructions
- In a saucepan, combine figs, grated apple, sugar, and lemon juice to create the jam.
- Heat over medium, stirring and mashing until thickened, about 15-20 minutes.
- Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment.
- Mix flour, brown sugar, salt, baking soda, cinnamon, and cardamom in a bowl.
- Add butter and mix until crumbly, then fold in oats and remaining vanilla.
- Press two-thirds of the mixture into the pan, add jam, and top with remaining crumbs.
- Bake for 35-40 minutes until golden and bubbling, then cool completely before serving.
Notes
Use ripe fruit for the best flavor.
Cool bars fully before cutting to ensure clean slices.
Consider adding nuts or seeds for extra crunch.
