  • 2 bags Success Boil-in-Bag White Rice (approximately 5 cups cooked)
  • 1 can black beans (15 oz)
  • 1 bag frozen corn (10 oz)
  • 3 bell peppers (any color)
  • 2 jalapeños
  • ½ small red onion
  • ½ cup cherry tomatoes
  • ⅓ cup cilantro
  • 1 large avocado
  • ½ tbsp Chile Lime Seasoning
  • 1 tbsp honey (optional)
  • 1 lime (juiced)
  • ⅓ cup olive oil
  • 3 tbsp honey
  • 2 tbsp red wine vinegar

Instructions

  • Cook the Success Boil-in-Bag White Rice according to package instructions and let it cool.
  • Prepare the frozen corn as per package instructions and set aside.
  • Dice the jalapeños, red onion, bell peppers, and avocado; quarter the cherry tomatoes.
  • Rinse the black beans under cold water and drain.
  • Combine cooled rice, diced vegetables, black beans, and corn in a bowl.
  • In a mason jar, mix lime juice, olive oil, red wine vinegar, and honey; shake to combine.
  • Pour the dressing over the rice mixture, toss, and sprinkle with Chile Lime Seasoning.

Notes

Allow the rice to cool completely to prevent wilting the vegetables.
Adjust the heat by using more or fewer jalapeños based on your preference.
Add the avocado just before serving for freshness.
