Ingredients

- 1 1/2 cups whole milk
- 1/4 teaspoon nutmeg (freshly grated for best results)
- 1/4 teaspoon cinnamon
- 4 whole egg yolks
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon rum extract or 1/4 cup rum, brandy, or cognac (optional)
- 1 cup half & half
- 1 cup heavy cream
Instructions
- Heat whole milk with cinnamon and nutmeg in a pot.
- Whisk egg yolks with granulated sugar until thick and light.
- Slowly whisk hot milk into egg yolks to temper.
- Combine mixtures and cook while stirring until thickened.
- Remove from heat, add vanilla and optional alcohol, then half & half and heavy cream.
- Chill the mixture and whip egg whites until stiff peaks form.
- Fold whipped egg whites into the chilled base and serve.
Notes
Use fresh eggs for the best flavor.
Chill all liquids beforehand for a creamier texture.
Experiment with different spirits for varied flavors.
