  • 1 Tbsp rum
  • 1 1/2 cups unsalted butter, room temperature (for frosting)
  • 8 oz cream cheese, full-fat, room temperature
  • 4 1/2 cups powdered sugar
  • 1 1/2 tsp vanilla extract (for frosting)
  • 3/4 tsp ground nutmeg (optional, for frosting)
  • 3 oz white chocolate, chopped (for ganache)
  • 1 oz heavy whipping cream or eggnog (for ganache)

Instructions

  • Preheat oven to 350°F (175°C) and prepare three 6-inch cake pans.
  • Whisk together flour, baking powder, nutmeg, cinnamon, and salt.
  • Cream butter and sugars until fluffy, then add eggs one at a time followed by vanilla.
  • Alternate adding dry ingredients and eggnog, starting and ending with flour.
  • Pour batter into pans and bake for 30-35 minutes or until toothpick comes out clean.
  • Make rum simple syrup and let cool.
  • For frosting, beat butter and cream cheese, gradually adding powdered sugar and flavoring.
  • Make ganache by melting white chocolate with cream or eggnog.
  • Assemble cakes, layering with frosting and syrup in between, then frost outside and drizzle ganache.
  • Chill before serving and add decorative touches if desired.
