- 2 tablespoons Olive Oil
- 1 large Sweet Onion, finely diced
- 3 Zucchini, cut into ¼” rounds
- 3 Yellow Squash, cut into ¼” rounds
- ½ teaspoon Garlic Powder
- ½ teaspoon Kosher Salt
- ½ teaspoon Vegeta or vegetable/chicken bouillon
- Fresh Cracked Pepper, to taste
Instructions
- Sauté the onions in olive oil until softened.
- Add zucchini, yellow squash, garlic powder, salt, and bouillon; cook until caramelized.
- Adjust seasoning and serve.
- For oven roasting: Preheat the oven, coat vegetables and arrange on a baking sheet, roast until tender.
Notes
Use fresh, firm zucchini and squash for best results.
Adjust cooking times based on thickness of vegetable slices.
Mix in other summer vegetables for added flavor.
