  • ½ cup chopped onion
  • 1 green bell pepper, thinly sliced
  • 2 garlic cloves, minced
  • 1 lb small shrimp, peeled and deveined

  • ¼ tsp cumin
  • ¼ tsp paprika
  • 1 tsp lime juice
  • Salt and pepper to taste
  • ⅓ cup mayonnaise
  • 2 tsps Sriracha (or to taste)
  • 1 tsp lime juice
  • ½ tsp Old Bay Seasoning
  • 4 burrito tortillas, warmed up
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded Mexican blend cheese, or your favorite cheese
  • 1 cup shredded lettuce
  • 1 cup pico de gallo
  • 1 avocado, sliced or mashed
  • Fresh cilantro leaves

Instructions

  • Heat olive oil in a skillet over medium-high heat.
  • Sauté onion, bell pepper, and garlic until fragrant.
  • Add spices and shrimp, cooking until shrimp are opaque and seasoned.
  • In a bowl, mix mayonnaise, Sriracha, lime juice, Old Bay seasoning, salt, and pepper for the aioli.
  • Layer ingredients in tortillas: rice, black beans, avocado, lettuce, pico de gallo, cheese, and shrimp.
  • Fold sides in and roll tightly, then slice in half and serve with extra aioli.

Notes

Do not overcook shrimp; keep them tender.
Warming tortillas makes them easier to roll.
