  • 1 tablespoon (15 ml) lemon juice
  • ⅓ cup (33 grams) shredded Parmesan cheese
  • ¼ teaspoon (0.5 gram) black pepper
  • 8 ounces (227 grams) smoked salmon, sliced
  • ½ cup (75 grams) diced tomatoes
  • 2 tablespoons (12 grams) chives or green onions, chopped

Instructions

  • Fill a large pot with water, add kosher salt, and bring to a rapid boil.
  • Add pasta and cook according to package instructions until al dente, reserving 1 cup of pasta water before draining.
  • In a large skillet over medium heat, melt butter and sauté minced shallots for 3-4 minutes, then add garlic for 30 seconds.
  • Add cream cheese, lemon juice, and ¾ cup reserved pasta water to the skillet, stirring until the cream cheese melts.
  • Combine cooked pasta with the sauce in the skillet, adjust consistency with pasta water if needed, then stir in Parmesan cheese, salt, and pepper.
  • Gently fold in smoked salmon and diced tomatoes until evenly mixed.
  • Serve warm, garnished with chopped chives or green onions.
