- 1 tablespoon (15 ml) lemon juice
- ⅓ cup (33 grams) shredded Parmesan cheese
- ¼ teaspoon (0.5 gram) black pepper
- 8 ounces (227 grams) smoked salmon, sliced
- ½ cup (75 grams) diced tomatoes
- 2 tablespoons (12 grams) chives or green onions, chopped
Instructions
- Fill a large pot with water, add kosher salt, and bring to a rapid boil.
- Add pasta and cook according to package instructions until al dente, reserving 1 cup of pasta water before draining.
- In a large skillet over medium heat, melt butter and sauté minced shallots for 3-4 minutes, then add garlic for 30 seconds.
- Add cream cheese, lemon juice, and ¾ cup reserved pasta water to the skillet, stirring until the cream cheese melts.
- Combine cooked pasta with the sauce in the skillet, adjust consistency with pasta water if needed, then stir in Parmesan cheese, salt, and pepper.
- Gently fold in smoked salmon and diced tomatoes until evenly mixed.
- Serve warm, garnished with chopped chives or green onions.
