  • 5 medium ripe plums
  • 3 tbsp (37 g) granulated sugar for topping

Instructions

  • Combine flour, vegan butter, and salt; work until coarse.
  • Add vanilla and water; knead into a soft dough.
  • Roll out dough between parchment paper to 10 inches.
  • Press dough into greased pie pan and trim edges.
  • Prick bottom with a fork; preheat oven to 350°F (175°C).
  • Sprinkle almond flour over crust.
  • Slice plums and arrange them in a circular pattern.
  • Sprinkle sliced plums with sugar.
  • Bake on lower rack for 50-55 minutes until golden brown.
  • Cool for 1 hour before serving.
