- 1 cup (125 g) all-purpose flour
- 1/4 cup (57 g) vegan butter, diced
- 1/8 tsp salt
- 1/4 tsp vanilla extract
- 2–3 tbsp (30–45 ml) cold water
- 1/4 cup (24 g) almond flour
- 5 medium ripe plums
- 3 tbsp (37 g) granulated sugar for topping
Instructions
- Combine flour, vegan butter, and salt; work until coarse.
- Add vanilla and water; knead into a soft dough.
- Roll out dough between parchment paper to 10 inches.
- Press dough into greased pie pan and trim edges.
- Prick bottom with a fork; preheat oven to 350°F (175°C).
- Sprinkle almond flour over crust.
- Slice plums and arrange them in a circular pattern.
- Sprinkle sliced plums with sugar.
- Bake on lower rack for 50-55 minutes until golden brown.
- Cool for 1 hour before serving.
Notes
Choose ripe, juicy plums for best flavor.
Keep an eye on baking time; ovens can vary.
Increase sugar for a sweeter tart.
