- 1 lb boneless, skinless chicken breast, diced
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 ½ tablespoons tomato puree
- 2 ½ tablespoons curry powder
- 1 teaspoon turmeric
- 1 tablespoon demerara sugar
- 2 tablespoons dark soy sauce
- 14 oz can chopped tomatoes
- 14 oz can coconut milk
- ½ bunch coriander, chopped
- Juice of 1 lime
Instructions
- Heat olive oil in a skillet over medium heat, then sauté onion, garlic, and ginger until soft.
- Add tomato puree, curry powder, turmeric, and demerara sugar; mix well.
- Pour in chopped tomatoes and coconut milk, and whisk until smooth.
- Simmer and add diced chicken; cook for about 15 minutes until chicken is tender.
- Stir in coriander and lime juice, then serve.
Notes
Using fresh ingredients enhances the flavor.
Allow longer simmering for deeper flavors.
