- 1 1/2 cups whole wheat flour

- 1/4 cup unsweetened applesauce

- 1 1/4 cups grated zucchini (about 1 1/2 zucchinis)
Instructions
- Preheat oven to 350°F (175°C).
- Line muffin tins with liners or spray with cooking oil.
- In a medium bowl, whisk dry ingredients together.
- In a large bowl, mix wet ingredients until smooth.
- Gradually combine dry ingredients with wet ingredients.
- Squeeze excess liquid from grated zucchini and fold it into the batter.
- Fill muffin tins about 3/4 full with batter.
- Bake for 18-20 minutes, checking with a toothpick for doneness.
- Cool slightly before transferring to a wire rack.
Notes
Squeeze excess moisture from zucchini to prevent sogginess.
Add nuts or chocolate chips for extra flavor.
Use fresh spices for improved taste.
