Instructions
- Blend half of the defrosted peas with sliced garlic and salt until smooth.
- In a bowl, mix the blended mixture with eggs, then add flour, baking powder, lemon zest, and mint.
- Fold in the remaining peas gently.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the batter into the hot oil, leaving space between each.
- Fry for 3-4 minutes on each side until golden brown, then drain on paper towels.
Notes
Fully defrost peas for smoother blending.
Adjust frying temperature to avoid burning.
