- 2 packages of pie crusts
- 20 oz can of blueberry pie filling
- 2 tsp lemon juice
- 1 tsp vanilla extract
- 1 tsp lemon zest
- 2 tsp cornstarch
Instructions
- Preheat the oven to 350°F.
- In a bowl, combine blueberry pie filling, lemon juice, vanilla extract, lemon zest, and cornstarch.
- Press one pie crust into the bottom of a pie pan.
- Fill the crust with the blueberry mixture evenly.
- Cut the second crust into strips and weave a lattice on top.
- Seal the edges of the crust and trim excess.
- Bake for 1 hour until golden brown.
- Cool before slicing and serve warm.
Notes
Make sure the pie crust is at room temperature for easy handling.
Adjust the sweetness of the filling based on your taste preference.
