Instructions
- Thaw puff pastry at room temperature for 15-20 minutes.
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Prepare the egg wash by beating together the egg and water.
- Toss sliced peaches with sugar, salt, cinnamon, and cornstarch.
- Unfold the puff pastry on the baking sheet and layer the peaches and blueberries.
- Brush the edges of the pastry with the egg wash.
- Bake for 16-18 minutes until golden brown and peaches are tender.
- Combine confectioners' sugar, vanilla extract, and cream to create the glaze.
- Drizzle glaze over the tart before serving.
