- 3 cups all-purpose flour
- 1 ½ cups granulated sugar (divided)
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp ground cinnamon
- 4 large eggs
- ¾ cup vegetable oil
- 2 ½ cups fresh blackberries
Instructions
- Preheat oven to 350°F (175°C) and prepare a loaf pan with non-stick spray.
- Combine blackberries with ½ cup of sugar and mash gently.
- In a bowl, whisk eggs with remaining sugar until creamy, then add oil and mashed blackberries.
- In another bowl, mix dry ingredients: flour, baking soda, salt, and cinnamon.
- Gradually mix dry ingredients into wet, stirring until just combined.
- Pour batter into loaf pan and bake for approximately 1 hour or until a toothpick comes out clean.
- Cool the bread in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Use ripe blackberries for the best flavor.
Reserve whole blackberries to sprinkle on top for added texture.
