Ingredients

  • 3 cups all-purpose flour
  • 1 ½ cups granulated sugar (divided)
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 4 large eggs
  • ¾ cup vegetable oil
  • 2 ½ cups fresh blackberries

Instructions

  • Preheat oven to 350°F (175°C) and prepare a loaf pan with non-stick spray.
  • Combine blackberries with ½ cup of sugar and mash gently.
  • In a bowl, whisk eggs with remaining sugar until creamy, then add oil and mashed blackberries.
  • In another bowl, mix dry ingredients: flour, baking soda, salt, and cinnamon.
  • Gradually mix dry ingredients into wet, stirring until just combined.
  • Pour batter into loaf pan and bake for approximately 1 hour or until a toothpick comes out clean.
  • Cool the bread in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Use ripe blackberries for the best flavor.
Reserve whole blackberries to sprinkle on top for added texture.
