Ingredients

- 1/3 cup tamari sauce or soy sauce
- 1/4 cup rice vinegar
- 1/3 cup water
- 2 tablespoons sesame seed oil
- 1/4 cup packed brown sugar
- 2 large chicken breasts, halved
- 1 head of Romaine lettuce, shredded
- 1/3–1/2 red cabbage, sliced
- 1 large carrot, grated
- 2–3 green scallions, chopped
- Small bunch of cilantro, chopped
- 1 can mandarins, drained
- Crispy chow mein noodles
- Slivered almonds
- Sesame seeds (optional)
Instructions
- Make the teriyaki glaze in a saucepan and simmer until reduced.
- Brown the chicken in a frying pan and add half the teriyaki glaze.
- Bake the chicken in the oven until cooked through.
- Assemble the salad with lettuce, cabbage, carrot, scallions, cilantro, mandarins, noodles, and almonds.
- Slice the chicken and place it on top of the salad.
- Drizzle remaining teriyaki glaze over the salad and garnish with sesame seeds.
Notes
Use fresh ingredients for the best flavor.
Adjust the sweetness of the glaze by varying the brown sugar.
