- 1/2 cup Greek yogurt or plain, strained yogurt
- 1/2 cup buttermilk
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 tsp almond extract

- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 1/2 cups cherries, fresh or canned, pitted and quartered
- 1 tbsp cornstarch
- 1/2 cup sliced almonds
- 1/2 cup confectioner’s sugar
- 1 to 2 tbsp cream
- 1/4 tsp almond extract
Instructions
- Gather all ingredients.
- Preheat oven to 350°F (177°C) and prepare loaf pan.
- Mix wet ingredients in a large bowl.
- Combine dry ingredients separately and sift into wet mixture.
- Toss cherries in cornstarch and fold into batter.
- Transfer batter to loaf pan, sprinkle with reserved cherries and almonds.
- Bake for 50 to 60 minutes until toothpick comes out clean.
- Cool completely on a wire rack and glaze with confectioner's sugar mixture.
Notes
Use a kitchen scale for precise measurements, especially for flour.
Room temperature ingredients help achieve a lighter texture.
Avoid overmixing to keep the bread fluffy.
