  • 1 cup shredded cheddar cheese

  • ¾ cup Catalina dressing
  • 2 cups nacho flavor Doritos (broken – about 80 grams)
  • Optional toppings: jalapeños, sour cream, cilantro, salsa, red onion, green onions, lime wedges, pico de gallo, black olives

Instructions

  • Brown ground beef in a skillet over medium-high heat for 7-10 minutes, then drain excess grease.
  • Add drained black beans and taco seasoning to the cooked beef, mix well, and set aside to cool.
  • Chop the tomato and prepare the salad by mixing romaine lettuce, tomato, corn, cheese, and red pepper in a large bowl.
  • Top the salad with the cooled beef mixture and mix gently.
  • Drizzle Catalina dressing over the salad and toss to coat evenly.
  • Sprinkle broken Doritos on top just before serving.
