- 3 cups shredded Gruyère cheese (divided)

- 4 tablespoons butter (for béchamel)
- 2 tablespoons all-purpose flour
- 1 ½ cups whole milk
- Nutmeg (to taste)

Instructions
- Melt 4 tablespoons of butter and whisk in flour.
- Gradually add milk, whisking until smooth and thickened.
- Preheat oven to low broil; butter one side of each bread slice.
- Spread Dijon mustard on four slices and add béchamel, ham, and Gruyère.
- Top with remaining bread slices and grill in a skillet until golden.
- Broil with extra béchamel and Gruyère until bubbly.
- Fry eggs in a separate skillet until whites are set and yolks are runny.
- Serve sandwiches topped with a fried egg and garnish with parsley.
