- 1 lb. boneless, skinless chicken breast
- 1/4 cup honey
- 1/4 cup soy sauce or tamari
- 1/4 cup organic ketchup
- 2 teaspoons minced garlic
- 1 tablespoon sriracha
- 1/2 medium onion, minced
- 1 tablespoon cornstarch
- 1 tablespoon sesame seeds
Instructions
- Mix sauce ingredients in a bowl until blended.
- Place chicken and minced onion in crockpot. Pour sauce over chicken.
- Cook on high for 1.5 to 2 hours or low for 6 to 8 hours.
- Check for doneness and remove chicken from the crockpot.
- Shred chicken using two forks.
- Add cornstarch to the sauce and whisk to dissolve.
- Combine shredded chicken back with the sauce and sprinkle with sesame seeds.
- Cook for an additional 30 minutes on high.
Notes
Ensure chicken pieces aren’t overcrowded for even cooking.
Adjust sriracha to personal heat preference.
Let chicken rest after cooking for optimal shredding.
