- 1 pound dry pinto beans
- 2 pounds bone-in ham steak, chopped
- 1/2 white onion, chopped
- 3 cloves garlic, sliced
- 1 bay leaf
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon smoked paprika
- 6 cups water
Instructions
- Rinse and soak the dry pinto beans in water for at least 4 hours or overnight.
- Drain and rinse the soaked beans.
- In the crockpot, combine the beans, chopped ham, onion, garlic, bay leaf, salt, pepper, smoked paprika, and water.
- Cover and cook on low for 6-8 hours until the beans are tender.
- After cooking, discard the bay leaf and ham bone, and mash some beans for a thicker broth.
Notes
Ensure to soak beans to promote even cooking.
Adjust seasoning according to personal taste.
For extra smokiness, consider using smoked ham or adding flavorful hot sauce.
