- 4 strips bacon, diced
- ½ cup yellow onion, diced
- 1 red bell pepper, diced
- 4 – 6 cloves garlic, minced
- 2 cups chicken stock (or chicken broth, or bone broth)
- 8 cups fresh green beans, trimmed
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon dried minced onion
- ½ teaspoon dried minced garlic
- ⅛ teaspoon cayenne pepper
- ⅛ teaspoon crushed red pepper flakes (use ¼ teaspoon for extra heat)
- 1 cup leftover ham, diced
- 1 ham hock (optional)
Instructions
- Cook bacon in a skillet until crispy, then remove.
- Sauté yellow onion and red bell pepper in the bacon fat until tender.
- Combine green beans and diced ham in the crock pot with sautéed vegetables and bacon.
- Season the mixture and pour chicken stock over until 75% of beans are covered.
- Cover and cook on low for 6 – 7 hours or high for 4 hours.
Notes
For a vegetarian version, omit bacon and ham, using vegetable broth instead.
Trim green beans to enhance texture and presentation.
Adjust spices based on your heat preference for a customized kick.
