  • ½ teaspoon black pepper
  • ½ teaspoon dried minced onion
  • ½ teaspoon dried minced garlic
  • ⅛ teaspoon cayenne pepper
  • ⅛ teaspoon crushed red pepper flakes (use ¼ teaspoon for extra heat)
  • 1 cup leftover ham, diced
  • 1 ham hock (optional)

Instructions

  • Cook bacon in a skillet until crispy, then remove.
  • Sauté yellow onion and red bell pepper in the bacon fat until tender.
  • Combine green beans and diced ham in the crock pot with sautéed vegetables and bacon.
  • Season the mixture and pour chicken stock over until 75% of beans are covered.
  • Cover and cook on low for 6 – 7 hours or high for 4 hours.

Notes

For a vegetarian version, omit bacon and ham, using vegetable broth instead.
