- 2 tablespoons olive oil
- 4 (4-ounce) salmon fillets
- 1 teaspoon kosher salt (for seasoning salmon)
- ½ teaspoon black pepper (for seasoning salmon)
- 2 tablespoons butter
- 6 cloves garlic, smashed and minced
- 18 ounces cherry tomatoes
- 1 cup heavy cream
- 1 ½ teaspoons kosher salt (for sauce)
- 1 teaspoon dried basil
- ¼ teaspoon cayenne pepper
- Additional black pepper, to taste
- ½ cup Parmesan cheese, shredded
- 3–4 ounces spinach, chopped
- ½ bunch fresh basil, roughly chopped
Instructions
- Pat salmon fillets dry and season with salt and pepper.
- Heat olive oil in a skillet, sear salmon for 1-3 minutes per side, then remove.
- Melt butter in the same skillet, add garlic and sauté until fragrant.
- Add halved and whole cherry tomatoes, cooking for 1 minute.
- Pour in heavy cream, add kosher salt, dried basil, cayenne pepper, and pepper; simmer for 2-4 minutes.
- Stir in Parmesan cheese and spinach until thickened.
- Return salmon to the skillet, incorporate fresh basil, and heat through.
Notes
Aim for a slightly pink center in the salmon for the best texture.
Use fresh spinach and basil for enhanced flavor.
Taste the sauce before serving to adjust seasoning if necessary.
