Ingredients

  • 1 small sweet potato, baked, cut, and frozen (about 6 ounces raw or 1 heaping cup cubed)
  • 1 cup frozen cauliflower rice (approximately 100 grams)
  • 1 serving collagen powder (20 grams)
  • 1 tablespoon almond butter
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon maple syrup (optional, for added sweetness)

Instructions

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Bake sweet potatoes for 30-40 minutes until soft, then cool and freeze cut pieces.
  • Blend frozen sweet potato, cauliflower rice, milk, collagen, almond butter, vanilla extract, cinnamon, nutmeg, and maple syrup until smooth.
  • Pour smoothie into glasses and top with nuts, seeds, or granola if desired.
