- 1 small sweet potato, baked, cut, and frozen (about 6 ounces raw or 1 heaping cup cubed)
- 1 cup frozen cauliflower rice (approximately 100 grams)
- 1 serving collagen powder (20 grams)
- 1 tablespoon almond butter
- 1/2 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon maple syrup (optional, for added sweetness)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Bake sweet potatoes for 30-40 minutes until soft, then cool and freeze cut pieces.
- Blend frozen sweet potato, cauliflower rice, milk, collagen, almond butter, vanilla extract, cinnamon, nutmeg, and maple syrup until smooth.
- Pour smoothie into glasses and top with nuts, seeds, or granola if desired.
Notes
Ensure sweet potatoes are properly frozen for creaminess.
Blend in smaller batches if your blender is not powerful enough.
