Instructions

  • Preheat oven to 325℉ and butter a 9×13 inch baking dish.
  • Simmer heavy cream, salt, black pepper, garlic, shallots, and thyme for 10-12 minutes.
  • Blend mixture until smooth and stir in goat cheese until melted.
  • Slice Yukon Gold potatoes thinly and arrange them in the baking dish.
  • Pour the cream mixture over the potatoes, ensuring all are coated.
  • Cover and bake for 60-75 minutes until fork-tender.
  • Add parmesan and panko topping, broil for 2-4 minutes until golden brown.
  • Let rest for 10 minutes before serving.

Notes
