- 3 pounds Yukon Gold potatoes
- 2 cups heavy whipping cream
- 8 ounces goat cheese

- 4 large garlic cloves, roughly chopped

- 3 sprigs fresh thyme
- 1 tablespoon butter (for greasing the baking dish)
- 2 ounces parmesan, finely grated
- 1/2 cup panko
Instructions
- Preheat oven to 325℉ and butter a 9×13 inch baking dish.
- Simmer heavy cream, salt, black pepper, garlic, shallots, and thyme for 10-12 minutes.
- Blend mixture until smooth and stir in goat cheese until melted.
- Slice Yukon Gold potatoes thinly and arrange them in the baking dish.
- Pour the cream mixture over the potatoes, ensuring all are coated.
- Cover and bake for 60-75 minutes until fork-tender.
- Add parmesan and panko topping, broil for 2-4 minutes until golden brown.
- Let rest for 10 minutes before serving.
Notes
For even potato slices, use a mandoline.
Pour warm cream mixture over potatoes for better flavor absorption.
Allow the dish to rest post-baking for improved texture.
